Asian Lettuce Wraps


Serves Four


The Ingredients

  • 1 lb ground beef (90% lean, 10% fat)

  • 1 tbsp olive oil

  • 1 medium yellow onion, small diced, about 1/2 cup

  • 1 clove garlic, minced

  • 1 inch fresh ginger, finely minced

  • 1 tsp rice vinegar (or apple cider vinegar)

  • 2 tsp lime juice

  • 2 tsp coconut aminos

  • 2 tbsp gochujang/Korean red chile paste/miso paste

  • 1 tsp coconut sugar

  • 1/8 tsp salt

  • 3–5 cranks ground black pepper, add more to taste

  • 4-6 leaves bibb lettuce plus more for wrapping

  • 1 cup brown rice, cooked

  • 1 lime, cut in 4 wedges, optional

  • green onion, for garnish, optional


The Instructions

  • Heat a large skillet over medium-high heat. Add oil and onions, sauté for 3 minutes.

  • Add the garlic and ginger and sauté for another 1-2 minutes. Add ground beef and cook fully about 5-7 minutes. Add all the other ingredients (except bibb lettuce, rice, & toppings) to the skillet and toss. Sauté for 1-2 more minutes.

  • Add the mixture into the lettuce cups, top with green onion and add a squeeze of lime. Serve with brown rice and use extra coconut aminos to drizzle on top of lettuce cups, if desired. YUM!
