Serves Two
The Ingredients
4 slices bacon, diced
4 cups chopped romaine lettuce
1 avocado, diced
1 cup cherry tomatoes, halved
1/2 cup corn kernels
1/4 cup crumbled goat cheese
Dressing
1/4 cup olive oil
1/4 cup apple cider vinegar
Zest of 1 lime
2 tablespoons freshly squeezed lime juice
2 teaspoons maple syrup
S + P, to taste
The Instructions
Heat a large skillet over medium-high heat. Add bacon slices and cook until brown and crispy, roughly 6-8 minutes. Lay on a paper towel to gather excess grease.
In a small bowl whisk together all the dressing ingredients.
Dice and chop all the vegetables. In a large bowl, combine all the ingredients and top with the vinaigrette (you may have extra!) Yum!
