Greek Pita Pockets & Feta Fries

Serves Three-Four


The Ingredients

Meatballs

  • 16oz ground lean chicken (or turkey)

  • 2 minced garlic cloves

  • 3 tbsp fresh parsley

  • 1 tsp oregano

  • S + P, to taste

  • 1 pasture-raised egg

  • 1/4 cup whole wheat bread crumbs.

Fries

  • 2 potatoes, cut into thin matchsticks

  • 1 tbsp olive oil

  • S + P, to taste

  • Dash of paprika, oregano, and garlic powder

  • 4 tbsp feta, to taste

Pitas

  • whole wheat pita pockets

  • 1 diced cucumber

  • 1/2 cup diced cherry tomatoes

  • Lemon, to taste

  • Feta, to taste

  • Tzatziki, to taste


The Instructions

Meatballs

  • Preheat oven to 400ºF. In a large bowl combine the all the meatball ingredients. Using a cookie dough scoop create the meatballs. Place on a parchment paper lined baking sheet. Bake for 15 minutes, flip and bake for another 10 minutes.

Fries

  • Coat the fries with EVOO and spices. Place on a parchment paper lined baking sheet. Spread out fries. Bake at 400ºF for 45-50 minutes (or until crispy), flipping halfway through.

Assemble

  • Warm pita pockets. Stuff with meatballs, cucumber, diced tomatoes, and feta. Squeeze with lemon and dip in tzatziki. Serve with feta fries and dig in!
