Healthy Strawberry Baked Oatmeal Cups

Makes Fourteen Muffins


The Ingredients

  • 4 cups old-fashioned oats

  • 1.5 tsp ground cinnamon

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2.5 cups unsweetened almond milk

  • 1/4 cup coconut sugar (or brown sugar)

  • 2 tsp vanilla extract

  • 1/3 cup pure maple syrup

  • 1 cup strawberries (diced)

  • 1/2 cup Vital Protein Collagen Powder


The Instructions

  • Preheat oven to 375ºF.

  • In a large bowl, mix together all the muffin ingredients.

  • Line a muffin tin. Add 1/4 cup mixture to each cup (making sure the mixture stays well combined...it may seem a bit runny!)

  • Bake for 20 minutes, or until fully cooked.
