Makes Fourteen Muffins
The Ingredients
4 cups old-fashioned oats
1.5 tsp ground cinnamon
1 tsp baking powder
1/2 tsp salt
2.5 cups unsweetened almond milk
1/4 cup coconut sugar (or brown sugar)
2 tsp vanilla extract
1/3 cup pure maple syrup
1 cup strawberries (diced)
1/2 cup Vital Protein Collagen Powder
The Instructions
Preheat oven to 375ºF.
In a large bowl, mix together all the muffin ingredients.
Line a muffin tin. Add 1/4 cup mixture to each cup (making sure the mixture stays well combined...it may seem a bit runny!)
Bake for 20 minutes, or until fully cooked.
