The Ingredients
Salad
4 cups mixed greens
1 1/2 cup rotisserie chicken
1/4 cup feta
1/4 cup walnuts
1 1/2 cup quinoa
1/2 cup blackberries
Dressing
1/4 cup blackberries
2 tbsp olive oil
1 tbsp balsamic vinegar
The Instructions
Prep brown rice according to package instructions.
In a large bowl, assemble the salad with mixed greens, chicken feta, walnuts, brown rice, blackberries, and mint.
In a high speed blender, add dressing ingredients and blend until smooth. Drizzle salad with dressing and serve.
