Pumpkin Protein Pancakes

Guilt-free pumpkin pancakes!


Serves Two


The Ingredients

  • 1 cup pumpkin puree

  • 1/4 cup unsweetened almond milk

  • 3 large egg whites (1/3 cup)

  • 1 tsp pure vanilla extract

  • 1 cup rolled oats

  • 1 serving of Vital Proteins collagen protein (unflavored or vanilla)

  • 1/2 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1 tsp baking powder

  • 2 tbsp Siggi's plain yogurt

  • 2 tbsp pure maple syrup


The Instructions

  • In a medium bowl, combine the pumpkin puree, almond milk, egg whites, and vanilla extract. Whisk together.

  • Combine oats, collagen protein powder, baking powder and spices. Mix the wet and dry ingredients together.

  • Head skillet over medium heat. Pour 1/4 cup batter for each pancake. Cook until the pancake bubbles on the top. Flip. Cook until golden.

  • Divide pancakes into two servings and top with yogurt and a drizzle of pure maple syrup.
