Guilt-free pumpkin pancakes!
Serves Two
The Ingredients
1 cup pumpkin puree
1/4 cup unsweetened almond milk
3 large egg whites (1/3 cup)
1 tsp pure vanilla extract
1 cup rolled oats
1 serving of Vital Proteins collagen protein (unflavored or vanilla)
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking powder
2 tbsp Siggi's plain yogurt
2 tbsp pure maple syrup
The Instructions
In a medium bowl, combine the pumpkin puree, almond milk, egg whites, and vanilla extract. Whisk together.
Combine oats, collagen protein powder, baking powder and spices. Mix the wet and dry ingredients together.
Head skillet over medium heat. Pour 1/4 cup batter for each pancake. Cook until the pancake bubbles on the top. Flip. Cook until golden.
Divide pancakes into two servings and top with yogurt and a drizzle of pure maple syrup.
