Sea Salt Chocoholic Cupfins

*Cupfin: cupcake meets muffin


Honestly you guys, I have a hard time not eating all of these in two days when I make them! But it is a smaller batch and gluten-free and refined sugar-free...sooo, dig in! :)


This batch makes 10 cupfins, but you can double, or even triple it if you want more! The cupfins are moist, chocolaty, yet not too sweet (!!!), & the sea salt flakes make it all come together! ⁣

The two little ingredients that make it extra yummy is @hukitchen chocolate gems (unrefined sugar) and @maldonsalt flaky sea salt! ⁣

The Ingredients

Cupfins

  • 1 1/4 cup almond flour

  • 3 tbsp. cocoa powder

  • 2 tbsp. coconut sugar

  • 1/2 tsp. baking powder

  • 1/4 tsp. baking soda

  • 1/2 tsp. sea salt

  • 2 eggs

  • 1/4 cup milk (any)

  • 1 tsp. vanilla extract

  • 2 tbsp. pure maple syrup

  • 1/4-1/3 Hu Kitchen chocolate gems

  • 4 tbsp butter, softened

Glaze

  • 1/4 cup Hu Kitchen chocolate gems

  • 1/4 tsp coconut oil

*Melt over stovetop over medium-low heat or in 30-second intervals in microwaves [stiring every 30 seconds].


The Instructions

  • Preheat oven to 350ºF.

  • Mix all the cupfin ingredients together. Pour in the muffin tin.

  • Bake for 18-20 minutes.

  • Let cool for 10-15 minutes. Prep glaze and remove cupfins from the tin. Drizzle with glaze and sprinkle with Maldon sea salt. Enjoy!
