*Cupfin: cupcake meets muffin
Honestly you guys, I have a hard time not eating all of these in two days when I make them! But it is a smaller batch and gluten-free and refined sugar-free...sooo, dig in! :)
This batch makes 10 cupfins, but you can double, or even triple it if you want more! The cupfins are moist, chocolaty, yet not too sweet (!!!), & the sea salt flakes make it all come together!
The two little ingredients that make it extra yummy is @hukitchen chocolate gems (unrefined sugar) and @maldonsalt flaky sea salt!

The Ingredients
Cupfins
1 1/4 cup almond flour
3 tbsp. cocoa powder
2 tbsp. coconut sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. sea salt
2 eggs
1/4 cup milk (any)
1 tsp. vanilla extract
2 tbsp. pure maple syrup
1/4-1/3 Hu Kitchen chocolate gems
4 tbsp butter, softened
Glaze
1/4 cup Hu Kitchen chocolate gems
1/4 tsp coconut oil
*Melt over stovetop over medium-low heat or in 30-second intervals in microwaves [stiring every 30 seconds].
The Instructions
Preheat oven to 350ºF.
Mix all the cupfin ingredients together. Pour in the muffin tin.
Bake for 18-20 minutes.
Let cool for 10-15 minutes. Prep glaze and remove cupfins from the tin. Drizzle with glaze and sprinkle with Maldon sea salt. Enjoy!
