The Ingredients
1 white onion, diced
2 large sweet potatoes, cubed
1 16oz jar of chunky salsa *no sugar added
1 15oz can of black beans, slightly drained
2 cups bone broth
1 tbsp olive oil & your favorite seasonings [chili powder, cumin, s + p]
Optional toppings: cilantro, shredded cheese, green onions, avocado, tortilla chips
The Instructions
In a large pot over medium heat, cook onion in olive oil until onions are translucent. Add the sweet potato + desired seasonings and cook for another 3 minutes.
Add all the salsa and bone broth and bring to a boil.
Once boiling, switch to medium-low heat and add the black beans.
Cover and let simmer for 20-30 minutes [or until sweet potatoes are soft].
Dig in! Tastes especially good topped with a little shredded cheese, avocado, and green onions!
