Serves Six
The Ingredients
2 cups raw walnuts
1/3 cup pure maple syrup
1/4 teaspoon ground cinnamon
1 pinch crushed red pepper
flaky sea salt, to taste
6 cups mixed greens
2 cups fresh pomegranate arils
1 (blood) orange, sliced
1/2 cup crumbled goat cheese
Balsamic Fig Dressing
1/3 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tbsp fig preserves
S + P, to taste
The Instructions
Preheat oven to 375ºF. Line a baking sheet with parchment paper.
In a small dish toss the walnuts, maple syrup, cinnamon, red pepper, and flaky sea salt together until the walnuts are well coated. Line on baking sheet and bake for 15-20 minutes -- be sure to move them around the pan twice during this 15-20 minutes.
Add the greens to a large bowl and top with the pomegranates, orange slices, crumbled goat cheese and candied walnuts. Toss the salad.
Whisk together all the dressing ingredients in a small dish. Drizzle on your salad & enjoy!
